Biography

Distinguished Professor of Nutritional Biochemistry and Chairman of the Department of Food Science and Biotechnology, National Chung Hsing University. Dr. Hu received his B.S. (1971) in plant science from National Chung Hsing University, M.S. (1975) in biology, and Ph.D. (1983) in nutrition and biochemistry from Texas Tech University (Lubbock, Texas). He worked as a Post-doctoral fellow and a Research Biochemist at the University of California Davis from 1985-1992. Dr. Hu came back from the US to Taiwan in 1992, but his family still lives in Davis, California. Dr. Hu’s professional career has focused upon the antioxidant and anti-tumor effects of phytochemicals, with an emphasis on carotenoid nutrition. Dr. Hu offers both undergraduate and advanced graduate-level courses that address human nutrition with a focus on oxidative stress and antioxidant protection.

Research Interest

Carotenoid nutrition, anti-oxidant/pro-oxidant effects, anticancer effects.
Roles of homocysteine and S-adenosylhomocysteine in atherosclerosis, ischemic stroke and
diabetes.
Anti-aging and anti-metastatic effects of nutrients.
