Biography
He worked for eight years as an industrial manager in the dairy area during which developed and registered 73 products in the Ministry of Agriculture Livestock and Supply. It is a partner owner of the Dairy Union Ltd. and startup CentroInova Food. Since 2006 is a professor at the Federal University of Viçosa. Has experience in Food Science and Technology acting on the following topics: technology and microbiology of dairy products, utilization of whey by-products and buttermilk, development of functional dairy products, legislation and inspection of dairies, bacterial taxonomy lactic acid. Coordinates the Science and Technology Laboratory of Milk and Dairy Products of the Department of Food Technology and coordinated the Dairy Crops Laboratory BIOAGRO / UFV. It has two patents registered in the area of dairy products. Technical coordinator of the agreement between Minas Gerais and the Region Brittany - France for the area of Milk and Dairy Products and maintains partnerships with STLO (Science et Technologie du Lait et de L'oeuf) Rennes, France; CT Dairy (Tecnolóxico Center Leche)? Lugo, Spain; STELA (Centre de Recherche et Technologie in Sciences du Lait)? Quebec, Canada; HIT (Harbin Institute of Technology)? Harbin, China. It is responsible for the Reference Center for Membrane techniques applied to dairy products. He participated in the training and was secretary of the Brazilian committee of the International Dairy Federation - IDF Brazil and participates in Dairy Science and Technology Committee. As a teacher since 2006 at the DTA / UFV guided thirteen doctors, four dual degree with Agrocampus Ouest, thirteen teachers and six postdoctoral students and guides currently six students in doctorate, two in the master's degree, four postdoctoral and six undergraduate students with scholarship.President of the DTA Extension Commission / UFV and develops technology transfer work, technological innovation and implementation of quality tools in different dairy products and has partnerships with companies in the additive area.
