Biography
 Afaf Kamal-Eldin, 1981–1986: Bachelor degree in chemistry and 1988-1990: M.Sc. degree in chemistry from the University of Khartoum (Sudan); January 1993: PhD degree in Food Science from the Swedish University of Agricultural Sciences (Uppsala, Sweden); 1994-1998: senior researcher, 1998-2008: Associate professor, and 2008: Full professor at the Swedish University of Agricultural Sciences, Uppsala, Sweden. Dr. Kamal-Eldin have supervised 17 M.Sc. students and 17 Ph.D. students from different nationalities and she has authored/coauthor 6 books and more than 150 papers in international journals on issues related to food and health with focus on antioxidants and antioxidant mechanisms, bioactive compounds in food, and nutritional biomarkers. Since 2010, she has joined the Department of Food Science at the United Arab Emirates University (Al-Ain, UAE) as professor and chair. Prof. kamal-Eldin research interests are mainly in the areas of food chemistry, food analysis, and food for health. Central to Dr. Kamal-Eldin interests is studens development and students motivation.
