Biography

Dr. Srinivas Janaswamy, known as Jana, is currently working as a Research Assistant Professor at Whistler Center for Carbohydrate Research, Department of Food Science, Purdue University. His research focuses on elucidating structure-function relationships in starch & non-starch polysaccharides, and design & development of novel hydrocolloid-based carriers. His extensive work on carrageenans, sulfated polysaccharides from marine algae with food and pharmaceutical applications, provides the functional roles of cations and co-solutes on their molecular structures, packing arrangements, solution and thermal properties.
